Life is what you bake it

As requested by Kavitha, below is my coffee & walnut cake recipe but on the subject of cakes I thought you might like to see the one my son made for his eight year old daughter’s birthday party.

Coffee & walnut cake: Cream together 8oz Flora (or butter if you prefer) with 8oz caster sugar. Add 4 beaten eggs and a coffee mixture made from 3 heaped tsp coffee granules dissolved in 3 tsp boiling water. Fold in 10oz flour (8oz self raising and 2oz plain) and 100g roughly chopped walnuts. Bake for around 60-70 mins at 160 C.

I have a strong dislike for anything buttery so for the topping I mix 2 heaped tsp coffee granules with 2 tsp boiling water and when cooled mix it into 1 small tub of Total 0% fat Greek yogurt. Into this I sieve icing sugar (difficult to say how much as I just add it until it’s as thick as it can take it). Spread and decorate.

I use pretty much the same basic sponge mix for several different cakes,  adding fruit or flavours as required and sometimes experimenting.

  1. Cake looks lovely Eloise. I have a similar cake recipe that I call the cake of many guises because you can change it around to suit any occasion. I’m sure the kids and Daddy enjoyed it very much.

  2. Thank you for the recipe! I’ve been wanting to make a coffee and walnut cake for ages but wanted a recipe that works, if you know what I mean.

    Could you just tell me do you bake your version in a round tin? Square pan? Is it a deep cake?

    • I use an 8″ round tin with a removable base. Yes, it is quite deep – 3.5″ approx. Sorry for the late reply – I have been away.
